 About the Role

The Food & Beverage Manager leads and manages all Front of House Food & Beverage operations at The Langlands Hotel, including 5 dining venues and functions. The role ensures exceptional guest experiences that reflect 4.5-star hotel standards while achieving revenue targets, maintaining cost control, and developing a high-performing team.

As a key member of the hotel leadership team, the Food & Beverage Manager contributes to the hotel's strategic and operational success, working collaboratively with other department leaders to maintain consistent service standards, operational efficiency, and strong financial performance.

Key Responsibilities

Operational Leadership

  • Ensure smooth, efficient operation of all food and beverage outlets, functions, and events.
  • Maintain high service standards consistent with the expectations of a 4.5-star hotel environment.
  • Ensure prompt and professional service of all meals, beverages and functions. This includes taking reservations, greeting guests, and assisting with taking orders.
  • Oversee the planning, coordination and delivery of functions and events.
  • Respond promptly and professionally to guest feedback.
  • Perform Duty Manager duties as required.

Maintain appropriate security procedures within all operational areas

Financial Performance

  • Manage departmental profitability through effective cost control and revenue management, including analysis and budgeting.
  • Monitor sales performance and ensure agreed financial targets are achieved.
  • Maintain accurate financial procedures.
  • Conduct regular stocktakes of food and beverage inventory, including arranging purchases.
  • Review food and beverage cost of sales and ensure margins align with budget expectations.
  • Work closely with the Head Chef to manage food cost performance and menu pricing.
  • Investigate discrepancies and implement corrective actions where required.

Team Leadership & Human Resources

  • Lead, motivate, and develop the Food & Beverage team to deliver outstanding guest experiences.
  • Conduct recruitment, onboarding, induction, and training of new team members.
  • Ensure all team members receive appropriate training and development.
  • Conduct regular performance reviews and identify development opportunities.
  • Encourage professional development of team members.
  • Manage staff rosters to ensure appropriate staffing levels and cross-training while maintaining wage budgets.
  • Ensure all team members maintain professional presentation and service standards.
  • Promote a positive, respectful and high-performing workplace culture.

Communication & Collaboration

  • Maintain effective communication between all hotel departments.
  • Work closely with the Head Chef to ensure consistency in product quality and service delivery. This includes menu planning and organising special functions.
  • Conduct regular management and departmental meetings with managers, supervisors and team members.
  • Encourage team engagement and actively seek ideas to improve operations and guest experiences.

Marketing & Business Development

  • Support the planning and execution of Food & Beverage promotional activities.
  • Assist in the delivery of themed events and seasonal promotions such as Mother’s Day, Long Lunch events and special dining experiences.
  • Use the reservation system effectively for service planning and guest engagement.
  • Identify opportunities to maximise sales and improve guest experiences across outlets.

Health, Safety & Compliance

  • Ensure licensing requirements are always maintained.
  • Monitor workplace hazards and ensure safety checks are completed regularly.
  • Ensure F&B team involvement, reporting, and training with H&S.
  • Ensure incidents and accidents are properly recorded and investigated.
  • Maintain high standards of hygiene, cleanliness, and food safety.

Sustainability

  • Support and promote The Langlands Hotel’s sustainability initiatives.
  • Assist with sustainability initiatives including Qualmark accreditation.

General Responsibilities

  • Maintain a strong “lead by example” leadership style.
  • Adopt a hands-on operational approach when required.
  • Ensure compliance with all policies and financial procedures established by the Invercargill Licensing Trust.
  • Complete all required reporting and administrative duties promptly.
  • Contribute positively to the hotel leadership team and overall hotel performance.

Qualifications & Experience

  • Proven senior hospitality experience with at least 2 years of F&B management experience
  • Current General Manager’s Certificate (or able to obtain one)
  • Demonstrated leadership, governance awareness, and operational capability

Salary for the position is $65,000-$75,000 depending on skills and experience. Working hours are 40 per week, rotating as required. This is a Full-Time Permanent, on-site position in Invercargill, Southland.
